Lemon Squares

Combine the following into a dough and then pat the dough into the bottom of a 9 x 13” pan. Bake at 300 degrees for 15 minutes.
  • 1 cup butter (softened)
  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt

 

While the crust is baking, beat the following ingredients together:
  • 4 eggs
  • 2 cups sugar
  • 1/4 cup flour
  • 1/3 cup lemon juice
  • Zest of 1/2 lemon
  • 1/2 teaspoon baking powder
Spread the mixture onto the baked crust and bake at 300 degrees for approximately 50 minutes. Cool, then sprinkle the top with powdered sugar.
