Beets

Favorite way to cook beets: boil beets for 30 min with a whole orange, 2 cinnamon sticks, bay leaves and a healthy pinch of salt. Cool and peel. Slice how you like them. I threw them into a salad with cucumber, orange, tomato, spring greens, red onion macerated in apple cider vinegar, and a mustard vinaigrette.
